It looks great! If you haven't already, I'd recommend putting some 1/4" aluminum plate on the backside of whatever you can reach, and through bolt everything. It will help limit spider cracks in your new and expensive gelcoat. If it was previously installed with only screws, now is the time to upgrade your hardware.

Should I do a new bimini top? I'm thinking lower and longer. Then dark blue with 2 black stripes. What do you guys think?

Only problem with much lower is that it is extremely difficult to move around in the boat. My uncle had a really nice low-profile one made for his Sebring. I need to go through the entire cooling system. Gauge only shows 2#'s.
Id start with the basics water pump impeller check the pop-off valve is not stuck you can normally reuse the gaskets and change out the small water pressure line to the gauge they always get clogged McMaster car sell it cheap 5 bucks for 25 feet.
Choose-A-Color Polyurethane Tubing Opaque Black

Yeah drill out the pisser as well, just do an impeller when you drop the lower to strip it.
I'm a BBC guy. What does drill out the pisser mean? I'm trying to learn.
The rubber / plastic fitting where the water comes out, they tend to b much smaller than the water line feeding it and can collect small stones etc.
Lots of guy run bypass hoses straight off each head to take more water out of the exhaust.
So instead of the cross over hose from the head to head. Run each one out the back?

When you're doing the impeller and since it's the first time YOU are doing it, replace ALL the gaskets. I don't remember what lower you have on yours but the standard 2.4/2.5 lower as well as the CLE I believe are all the same impeller set-up and it's good to replace all the gaskets and O-rings every few years. I convinced my uncle to pull up the bottom plate of his impeller housing this last time and his idle water PSI went from 4 to 6 by doing so.
