I was advised to trim off that fat so wouldn't flair up too much and that worked well. Seared on direct heat both sides and then off flame for slow cooking... mine did well for a first timer. Tons of steak so got multiple meals off it.

Yeah I think pretty much everyone refers to them as Tomahawks... was interesting down here they call em Cowboys. My bowels are a mess from 3 days of red meat so salads all week, lolI usually get one cut and the butcher will do that, I was in a hurry that day and grabbed that from the cooler.
I try to leave a quarter of an inch or so for flavor.
Amazing piece of meat, the Wife and I usually get 3 uses from one.
