Every year we have Christmas Day at our house. My immediate side and the wife’s immediate side plus her grandparents come. We do filet mignon as the main course. This year I’m gonna smoke a Mac and cheese, do mashed taters, salad, and a vegetable side. I’ll post pics as we go. I hope all of you spend the time with your family and wish all of you a very Merry Christmas!

We weren't sure what Christmas was going to be like because of my hip so we didn't plan anything. It's just the two of us now so we're going with the basics. Spiral Ham, Scalloped Potatoes, Green Bean Casserole.

Christmas eve dinner is picanha steak cooked on the Weber charcoal, hashbrown casserole with jalapeños, and homemade blue cheese dressing for wedge salads.
Lots of bourbon and wine.
Simple.

Christmas day is Honeybaked Ham, green bean casserole with real onion rings mixed in, and loaded baked potato.

Lots of bourbon and wine.

Hosting Christmas Eve dinner.
Marinating 220lbs of fat for 3hrs before my guests arrive. With mostly Coors Light. Mostly.
Then continue Marinating said meat after my family arrives. They like to help with the Marinating. Add extra bourbon to my Marinade after my mother in law shows up and SERVE.. Should be a good time...🤣

We generally duplicate Thanksgiving. Traditional turkey, stuffing, mashed taters, etc. but with a few family dishes added. Coming from my French Canadian grandfather and Italian grandmother, we also throw in Tourtiere (French Canadian Meat Pie) and a ricotta cheese gnocchi dish. They were always included in my family's holiday dinners, so we carried it on, and now our kids and grand kids are making it, too.

I’m smoking a couple of spatchcock chickens. Scalloped Potatoes, green beans and rolls.

We usually do Prime Rib every year but my MIL loves the outcome of my smoked chickens. Anyway, my 23yo college going daughter asks what we’re having, I say, “smoked chickens.” She replies with, “Why? Are we poor?”
LOL, I thought it was hilarious, observant but hilarious.

I only real deal with the meat. When looking at prime rib recipes I came across a video where a guy did “melted onions”. Not something I have had before as I normally do caramelized onions. Can’t find the video now.

Tonight we had some friends over for dinner and I broke in the new smoker with some Tri tip. Great opportunity to test run the onions.

Julienne a few onions. Toss salt, fresh rosemary and a few cloves over garlic in a food processor. I didn’t have the ingredients so I used dried rosemary and jarred garlic. Mix the seasoning into the onions by hand in the cooking pan, the onions will start creating the juice they will cook in. Apply medium high heat. Add more water or broth if you don’t have a little juice at the bottom of the pan while cooking. Once cooked down, slowly add butter, 1/2-3/4 stick, melt and blend,

Makes for an amazing topping for the meat dish. I’ll be prepping these to top the prime rib for Christmas dinner. Amazing flavor.

My Sister text earlier asking if I would do the cooking if She hosts. Brother replied he has to work. Other Sister no response. Mom should be there so I will ask her what She wants me to cook. Most likely a big bone in ribeye try and find a 6 or 7.

Every Christmas dinner, for the most of them anyway is a gold foil wrapped farmer John ham! It’s a heavy one too! For lots of breakfasts and sandwiches!
I couldn’t find a gold wrapped ham this year. I’m a bit disappointed but by the time I’m done smoking the half ham it’s almost as good.

Wow. Some good looking meats in this thread. Spending $100+ on 1 piece of meat seems crazy to me, but those sure look good.

We went a little nuts at Costco the other day. A personal record for me: $700 for food and booze. I have a couple tri tips that we'll eat before now and then, and I'll probably smoke both pork butts on Xmas day for pulled pork sandwiches and tacos. It's just the two of us, so getting through 16 lbs of pork may take us a day or two. :)

We did traditional (Honeybaked Ham) for Thanksgiving. The wife seems cool for just a mellow Xmas with whatever I end up cooking.

Just the wife and I on Christmas morning, I made a breakfast fatty roll that I'm gonna throw on the smoker at 5 or 6 am. We'll eat breakfast and hang out and watch Christmas movies all day. We were supposed to have company but we're both sick and don't want to be spreading that crap around.

Our first Christas where it is just the 2 of us. We celebrated Christmas with the the girls when they were here for Thanksgiving…It doesn’t feel like Christmas to us.

Having said that.

12-24 Sushi and cocktails for a couple hours and Uber home.
12-25 I bought a couple bottles of my wifes’ favorite champagne. So it sounds like we are day drinking at home and then I will grill steaks for dinner.

Merry Christmas RDP.

This will be a new concept for us…….

In Australia, the Australians do Christmas Lunch. I guess it’s a huge spread. We are expecting lots of Prawns.

Since we are on a cruise, Its kinda hard to tell the nightly dinners from the special event dinners. LOL. Every meal seams like Thanksgiving.

I just got back from the Buffet……. lol
