I just walked through the kitchen and it looks like we are doing tacos. Shrugs.

We are doing tamales tonight and I don’t know what else as it’s not at my house.

To my sister’s for Christmas Eve. It’s going to be Mex this year. Enchiladas, tamales, rice & beans. We were all raised on good So Cal Mex food. For a couple of gringos, my wife and sister to a good job with it. For Christmas it will be just the 2 of us. Grilling a couple of rib eyes with King Crab legs, plus a baked potato. Simple, easy and good.

Dinner tonight for my girls and I. Unfortunately I didn’t indulge in the wine as much as I wanted to because they were dragging me to candlelight church service afterwards.

Ended up with a 9.88 lb rib eye roast, Brussel sprouts, corn on the cob, shrimp appetizer, golden potatoes going to fry in coconut oil and a cake. The pies were sold out.

About to Stat seasoning it now. Pulled it out this morning. Been debating tried and true method. 5 minutes per pound at 500. But would have to drive to Sisters house twice. Or throwing it in my oven at 250-300 then finishing it off at 500 in her oven while I cook everything else. Saves me a trip and I can get some work done.

Wife and I have been cooking prepping for a few hours now. Veggie tray, mashed potatoes are in croc pot on keep warm, in about an hour I’ll throw the Mac and cheese on the smoker, made the salad, also in about an hour I’ll season the filets then shortly after let them get to room temp before we get this party started.
