Got a whole onion, one full head of garlic cloves, couple bay leaves, and two chicken bullion cubes. Bring to boil and lower temp and add chicken.

Pozolé was always a new years after party snack. With tamales.

Green chili pork, I mean, 16 chili Caucasian stew, sounds good for New Year's Eve.

I posted as I was making this last night. Took about 1:30 from start to finish. Surprisingly easy to make.

Now Albondigas, that takes me 4-5 hours to make. Lots of prep work goes into it.

I make my own stock from scratch, so that takes about 4 hours start to finish. Once that is done the soup itself only takes an hour or so.

In New Mexico, the meat is cubed pork tenderloin, and it's spelled posolé.

There's so much garlic in Hamed's version you could use the stuff to etch concrete before laying down epoxy.
