By the way...not a lot of OG Texans know what tri tip is. Amazing to me but I get it...sorta

And a lot of Californians think they know brisket until we get out here. That said, hard to beat the quick and easy tri-tip.

Doing a pre-marinaded pork loin and a few random chicken legs that were needing cooked. Weather is just nice enough to hangout outside while it’s cooking.

Here in New England they evidently don’t do tri tip. Can’t find tri tip roast or strips.
Costco doesn’t have them. Sam’s doesn’t have them.
They have steak tips which I guess might be their version. I don’t know. Still trying to figure out this east coast life style. 😁

Your butcher should be able to special order it. Tell them it is the tensor fasciae latae muscle from the bottom sirloin, and it is number 185C in the NAMP book, the butcher’s bible.

Thanks. I screen shotted this. There is a local butcher place that seems competent. I’ll give it a try.

Got a couple of 1½” porterhouse steaks in the sous vide box for another half hour then out comes the torch for a nice sear. After dinner dishes are done we’ll make a run to Handel’s for some ice cream.

Buying Prime tri tip at Costco or Walmart/Sam’s club is the way to go.

I buy them a lot. Easy to cut up and make kabobs with. Definitely not comparable to filet kabobs but they come out bomb in the air fryer. The multicolored bellpeppers and sweet onions from Sam's. Tri tip from Sam's is better and the whole ones work great in the air fryer. The Sam's club short ribs come out bomb out of the air fryer also.

Tonight I am not sure what to make yet. I have some of the jalapeño and cheddar sausages from Sam's. Cook in the air fryer. And 1 bellpepper and sweet onion fried on a pan. Mustard and a toasted Sam's club roll might be what I do.

Ha ha ha. I think the stuff shrimp gets that, seems like more work than pan searing some fish. lol.

As for the manhattan. Pretty simple to make

2 parts bourbon
1 part sweet vermouth
2 dashes bitters
1 dash orange bitters (optional)
Shake it with ice and pour.

To many people drinking old fashions these days.

it's called a California cut for a reason...well at least the butchers in Texas we went to called it that.. The one guy mentioned years ago that the only ones that ask for it are the transplants.

Triangle roast... That's what the butcher calls it where I get my beef. In this part of the world that piece of meat ends up as hamburger unless you ask for it specifically.

It took a little while to find tri-tip here, but finally found a butcher.

Wife sent me a recipe. Said let's try it the way it says in the recipe. I change stuff in recipe's all the time. Well this one had tofu in it. I said ok I will try it. It came out ok, but before we were half way through eating it she said we need to get a different protein and throw the rest of that tofu away. LOL Dish was good and healthy.

Not El Tepeyac but Villa Tepeyac. My in-laws owned 2 restaurants. One in South El Monte and one in West Covina. Covid shut them down and they never reopened. My father in law let me have the sign from the West Covina building. Wife and I spent the spring restoring it back to its original glory! Now it’s proudly displayed in my back patio.

The Costco and Sams club around me do not carry Tri Tip, although the local grocery stores and the Commissary (military grocery store) do. Just seems odd.
I enjoy the flavor of Tri Tip although my wife does not care for any beef that is not Prime Filet..😂, burgers are ok.
