One of the things I’ve seen at Costco is tri tip steaks (basically strips). Haven’t tried them yet but I want to.

Buying Prime tri tip at Costco or Walmart/Sam’s club is the way to go.
I tried the strips once and found them tough... never again...

Maybe you will have better luck

My favorite fish . Try making an Avocado relish to go with it .
2 Diced Avacado's
1/2 Diced red onion
1/2 Diced red bell pepper
Lime juice to taste
Pepper to taste
Kosher salt to taste
chopped cilantro to taste .
If you want a little heat a little finely diced jalapeno

Tri tip is a little like brisket, gotta low and slow it with a finish sear. If you treat it just like a steak and cook it hot and fast I don’t think it will be tender. At least that’s my expectation when I try them.

I cook them at 320 in the air fryer and finish it at 400 for a few minutes at the end. The tri tip steaks can be tough. The last few tri tips were perfect.

It's the poor man's filet. Hard to justify filet when you have to cook for a whole crew. Got 18 family members on next river trip.

I just find them too slender that can be over cooked if trying low and slow compared to a traditional tri tip. Perhaps it can be better if Sous-vide then seared.
