When Sadie's was a greasy spoon inside the Valley Bowl, the food was great. I've never liked the commercialized version.
Agree...
Used to go to Sadies when it was in the bowling alley...it was awesome.
Now it's just tourist food.

Couldn't agree more. I love that place along with Modelos in Albuquerque for great burritos and sopapillas
El Modelo's been around in the same location since the 60's...as a kid I used to ride my stingray bike there in the summer&eat.
You're spot on...great Burritos&sopapilla's.

My wife and I stop at El Modelo's on our way from the airport to my dad's house in Rio Rancho. Their big burritos swimming in chile verde are killer.

I think they've been at that location since 1948.

Question for the roasting pros.....What's the best / easiest way to get the skins off after roasting?

This has been the part I hate to mess with. Need guidance.:D
I take them off the heat and shock them with a quick ice water dunk.
Skins peel right off after. Usually one to three pulls has it done.

So my wife bought ten pounds of chilies but they're the hot ones. Like jalapeno hot. Any ideas on what to do with them? I don't want to roast them if I won't use them.

Roast them up.
The seeds and white veins are the really hot part.
Trim it out and the meat of the chili has some hot but some sweet too.
Much more mild than with seeds and veins.

Roast them, remove the membrane and seeds like was mentioned and use them sparingly in sauces, soups and stews if they are still to hot.

My mom had an easy method. She would remove them from the oven, place the broiler pan on the counter, and tell me and my brothers "Peel the skins."

This was repeated about forty times. :D

So i asked about the smaller sized Chile in the xtra hot sack as they seemed smaller than years past and had no idea there was such a thing as a hybrid.

OK, first as the heat goes up the size goes down, Xhot's are a smaller chile than Hots. Now not all the peppers will be the same in a sack. If a bee zaps a Mild chile then goes and zaps a Xhot chile, that one chile on that Xhot plant will become a Mild chile. So the sack could have a few different than what the tag says it is. Now as for the grocery stores chile, that chile is a Hybrid chile, our chile Hot, a Sandia, there is maybe 4 to 6 chiles on a plant. The hybrid chile there is oh, about 12 to 16 chiles on a plant. The size can be different on the same plant and the heat different on the same plant. Most of the Hybrid chile is grown in Arizona, I know it says Hatch chile, it is shipped from Hatch but not grown there. I know this as one of the two Hybrid farmers in the valley lease land from me, or our family, to grow onions. To me, these farmers are ruining the name of Hatch chile. They are only in it for the money, they don't care about the chile. Those hybrids have less meat in them. Each type of HATCH chile has it's own unique characteristics, the hybrid chile has none. I hope this has helped you, or answered your questions.

We get ours from ElRey farms. They deliver to LaPuente high school every year. You can get them roasted or fresh.

Speaking of Green Chile and Green Chile Cheeseburgers, do the Fat Burgers in cali serve Green Chile?

We have a fatburger here in Albuquerque now, and they serve green. Was curious if its a local thing or if Fatburger does it everywhere?
Our mcdonalds, bk, wendys, etc all have green chile cheeseburgers here...

Only place I’ve found green chile on burgers is Sonic in Az. Never seen anything in Ca.

Our local Albertsons has a display 4x6 full of them. Loose and pre bagged.
Caledonia Michigan. I found out a rep from Melissa's produce will be here in a week or so for a chili roast at the local grocery store!! I told the produce manager to save a box or two for me.

So no shit, I go make a beer run yesterday and it looks like the south side of ABQ in front of the supermarket. Little Mexican guy with his big drum roaster, Oompa Oompa music playing and Chile Verde being sold from a stand.

The store had a Hatch Chile event. Freaking awesome. Picked up a couple of pounds. Cheeseburgers on the menu tonight!

Yeah it's the dirt. My buddy gave me some special seeds from Syria that pretty much don't exist anywhere and his were mild and mine in AZ were Frickin hot. Weird how different climates and soils do weird stuff to the peppers.
The peppers are called Allepos and they are a great pepper for cooking.

Yeah it's like growing grapes for wine. The soil, the water retention of the hillside, temperature for that particular year yields a grape that struggled and will produce a different flavor. Kinda the same with the peppers I have found.

Your not joking. Our well water has a ph of 8.8 which sucks for growing. I have to drop the ph for all my things I'm growing in the garden.

Yeah there's a few things in chemistry that make plants weird. Use some Epsom salt and some nitrate to really get them going fast.

I have made friends with the local wine grape and the local organic pot growers in my small city. Their knowledge has helped so much. The money we have spent on trees and plants that would die was upsetting.

I've got a tomato plant that's just starting to come around. Go figure.
What zone are you in?
We’re 9a here, in citrus country.

These are from last December.
The tomato plant was out of control and almost 6’ tall.
And Swiss Chard for days.

I stopped at the chili roast at the local grocery store today. They had a rotisserie roaster for the chilies. That seemed to roast them more evenly, I also realized I was leaving them on the grill way too long! In other words, the "skin" is way thinner and delicate than I thought.

My tomato that's been in the ground since June. That I just started ignoring cuz it was not doing anything and curling the leaves. Now it's started growing. I usually just kill everything, so the fact that anything's growing I guess is a plus.

I think I should have started a greenhouse with chilies. My ration of frozen is disappearing quickly while cooking from home. They go on eggs, burger, nachos, tacos, just about anything.

I need to get a heat mat , so I can start my seeds. My office and garage are to cold, it took forever last year.
