Not exactly Easter Lily’s, but not a bad LHC substitution in our backyard today. TriTip is ready for the Weber kettle for our secluded Easter dinner. Missing our kids and grandkids

First Easter without the daughter or any other family. Suffering a bit of empty nest syndrome. Still doing a ham on the smoker and a couple of sides. Overall it's kind of a depressing day.
we are in the same boat, did a group face time earlier, usually a big party at our home, this year frozen pizza. Just thankful and thanking God everyone is safe and healthy. This will pass soon and we will be hanging all together on the water. hang in there!

Long story short I doubled down and got the monster lobsters from one of those overnight lobster places. Giant shrimp cocktail, Clam chowder, crab cakes and steaks from wash 11..


I am excited and am gonna need to put on the stretchy pants before dinner. :D

I feel for you, our son, daughter in-law and 4 grandkids our staying in like the wife and I. Miss seeing them.

Good lord some of you guys should own restaurants!
A few of my Echo neighbors do. I was a good cook before and have learned a lot from them. Never owned a smoker or made a batch of chili before. Our annual chili cook off got me into it along with our BBQ and smoke off competitions.

Man you guys killed it, today it was just the wife and I. No pictures but my wife made a awesome omelette for a very last breakfast. Then for a late dinner she made a big pot of vegetable beef soup that we can work on tomorrow starting week 5 of working from home. As a lot of you are family is separated so we will all get together when this crap blows through.

I already tossed the cans but will take pics of everything needed and how i did it in crock pot. Very easy and it came out perfect. Make a post next trip to grocery store. 20200412_202722.jpg

I just finished eating some of the rib roast. Came out great. I broiled on high for 30 min turned off for 30 minutes. Then 2 hours at 250 small only 5 lbs.

Wow those ribs looks good. What did you cook them on? I was thinking about getting an electric smoker during all of this to play around with but they are sold out. I guess everyone had the same idea.

My traeger. It is about a 6 hour deal but they never disappoint.

Scored a 4.5lb bone in rib eye roast for $20
I couldn’t not buy it.
Soaked in a red wine and home grown rosemary. Some avocado oil, salt and pepper.
Seared on the propane then smoked on the side burning stick burner.
This was just going into the smoke

Threw a roast on the bbq to get a little "bark" on it. Then into the instapot with taters, carrots, 2 cans of of cream of mushroom soup. Added Mexican squash to the steamer level and set it 15 minutes. Came out pretty good and definately tasty. Never mind the kiwis, apple, or the huge spuds (which have a date with some broccolli and cheese sauce later in the week).

Quietest Easter we ever had. No Easter Service at church. Usually 30 plus Family here, 20 lbs of carne/pollo asada cooked with all the fixins, Easter baskets and an egg hunt. Sure missed it.
So, for dinner this year, a 25oz ribeye done in the cast iron skillet, with three tablespoons of bacon grease and served with a mess of greens.
If you have never done the cast iron skillet and a steak, I highly recommend it. As good as any steakhouse guaranteed.
Day wasn’t a total bummer...Daughter in law delivered a healthy baby boy yesterday...giving us an even 10 grandkids!

these were the medium ones. Lol. They sell huge ones too!
These ones came from www.thelobsterguy.com.


we have ordered from lobster graham as well and some others..


I think these were 12-14’s. Tonight we are cooking the other 4 They are in the oven tonight as we are experimenting with different ways of cooking them.

The clam chowder was a big hit.. 1/2 gallon was gone instantly.

Ya, those are Yorkshire puddings. But yea, like a popover roll. Crusty on the outside doughy on the inside.

Similar to those Fogo, but just not so flavorful. They're a little more simple.
