I haven't posted a ton in here lately but I went down the cast iron rabbit hole pretty hard. I bought about 30ish random pans from eBay, thrift shops, garage sales etc. Pretty good range of brands Le Creuset, Griswold, BSR, Lodge, Wagner, etc.
My favorite pans by a huge margin are the one's I sanded smooth or came super smooth. I don't give a shit about seasoning anymore I start smooth and oiled and make sure the pan doesn't get put away dry end of story. Clean up is easy at most some hot water and a paper towel I usually just wipe em out and that's it. I have really stepped up my culinary game it's pretty much my hobby now and the smooth finish is $$$ for me. And yes my pans are holding a ton of seasoning with the smooth finish and I don't do anything to help that along besides cooking in them

I'll post the recipe in the cooking section later today it's a game changer and super simple. One positive outcome of the Rona and all the restaurants going to shit was I got my cooking game together focusing of dead simple homemade food. It took me a long time to learn and lots of fucking up but I have finally surpassed most restaurants I fondly remember and I lived to eat out because it was always better than the shit I made at home.
Today's breakfast was breakfast burritos with some left over changa pollo. Last night I took all the green

Damn, no pics but the little lady did a pork loin (2.5lb) seared stove top in some Cajun spices in one of her CI skelets then transfered to the oven for 45min. Her great skin on hand mashed potatoes, green beans, salad and rolls made it. Damn that was good...

Missed this thread somehow? We have a lot of cast iron. Kinda ridiculous really. Cornbread is best in cast iron. My wife cooks everything in it though.

As stated for seasoning a new pan. Olive oil baked is a great start, but honestly after that start cooking bacon and burgers. Anything greasy and don't use soap. Hot water, rinse and dry.

Noticed they had these the other day at Sam's...forgot to post it. Lodge ain't the top dolla shit, but gets it done..not a bad price.

If you are talking about copper cast pans they make meat taste like metal IMO. But they do heat up quicker but lose heat faster. CI hands down!

But maybe you are talking a brand of CI?

After Lots of experiments, here is my current method EVERY time I use it...

After using it for Anything, I wash well with soap and water.

Dry with a towel Immediately, and then apply a light coat of Flaxseed oil.

I put it on the burner until it just stops smoking, remove it from the heat, and it's like Teflon for the next use.

Sometimes I'll wait to treat it until il ready to use it, so it's fully preheated for cooking.

Nothing sticks to it at all anymore. It's the only way I'll cook a steak now!

Breakfast goes on the Blackstone these days. I don't have it fully dialed in yet, but I'm learning what works and what doesn't.

This was all Cooked on the Blackstone and kept warm in the cast iron pan...

Anybody need a pan? These have been in storage need to go before we hit the road in the RV. All vintage Griswold, Le Creuset, BSR, Lodge. The orange LeCreuset's got a little to hot by the previous owner and put away they are pretty much new had planned to reseason them but never got around it. The flash rust will be cleaned up before shipping happens fast on the coast

Copper pans lined with stainless steel.

Much faster and much more even heat transfer than cast iron.

The Skater of pans and pots.

I have a few All-clad $$$ pans they are pretty badass but I rarely use them

So I bought the smallest pan Lodge makes. Wanted to try making a Frittata this morning.

I seasoned it on the stove top with Flaxseed oil first.

One egg, small pile of freshly grated parmesan cheese, pepper and a splash of oil.

Topped it with Apple smoked sausage that I over cooked 🙄 and a sliced scallion.

As you can see, the egg did Not stick to that pan! Washed it with soap and water after and it's good to go again.

Quick easy breakfast. The parm gave it the salty flavor eggs need. 👍🏼
