I NEED this recipe asap!
Here you go.

First, make your dry rub...

Dry Rub Ingredients:
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1 tablespoon cayenne pepper
  • 2 teaspoons dried oregano
  • 1 teaspoons coriander powder
  • 2 teaspoons ground cumin
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
Then cut up 3 pounds of beef - Chuck, Rib Roast or Brisket (crazy to use Brisket I know but it was amazing!) - into small chucks, all about the same size. Add the dry rub and make sure all sides are coated.

Heat 3 tablespoons of oil - canola, vegetable, corn or sunflower (no olive) to mid heat, then sear all sides of the beef chunks, set aside.

In a crock pot, put 3/4 of a cup of beef broth and add in juice from one large lime, then add meat and mix to get the broth mixture on all of the beef

Cook on high for 4-5 hours or low for 7-8 hours. When you have about an hour of time left, shred the beef... If not shredding easily, let it go the last hour... If shredding easily, it is ready to go!

Serve on corn tortillas (hard or soft, we make our own hard shells) with pico de gallo, fresh cilantro and Mexican crema.

You can use store bought, but here is my crema recipe if you want to make it.
  • 1/2 cup sour cream
  • 1/3 cup mayo
  • 2 - 3 tablespoons lime juice
  • 1 teaspoon garlic powder
  • 2 teaspoons Sriracha (I know, but it works)

Here you go.

Last minute dad is In charge of dinner. The obvious choice is to grab a handful of Joel’s meat.
Enter the fajita meat pack. Well since I’m not a fan of vegetables and neither it my little kids. Meat, beans, and rice it is in a flour tortilla. Kids approved. Wife came home and she isn’t much for red meat even liked it. She usually only it’s completely burned red meat.

Purchased a sampler pack on the last so cal delivery. The meat taste good and wife likes it as well. 👍

Getting to the bottom of the ole freezer and yanked out a package that said stew meat, was going to give it to inlaws but browned it up and threw into insta pot instead with the normal cast of characters, potato, carrots, etc etc, dam that shit turned out good, flavor and tenderness was outstanding.

I plan to chop the stew meat into small pieces and use it in chilli

I had never made it...my mom was in town for Halloween and turned it into a crockpot dish with egg noodles etc. I'd do that again.

today we got our delivery. Had a nice time meeting and chatting with Joel and Amy. They are such great people. I can’t wait for the next opportunity to have some time to continue our conversation. We are planning a medley of meat for our Christmas dinner.

We had a trio for Christmas dinner. London Broil, New York Strip & cube steak. This was my first time having the meat that was just dropped off last week. Oh my each were so good. Never had cube steak before and had no idea of what it was. My mother is in town and created a dish in the crock pot. The steak could be cut with a fork. Thanks Joel!!!!!!

Turned out good, I either have a bad temp probe (tried a new one same reading) or I’d recommend pulling these about 15* early. Second run same result, medium well vs med rare… meat quality epic as always. This is the only cut I’ve had trouble on completion temps.

I’m so sad. We made Mississippi pot roast last night with a cross rib roast and it was delicious! I turned off the crock pot to let it cool before putting it in the fridge for leftovers today. Well… I forgot to put it in the fridge before I went to bed. I was really upset this morning waking up to it.

Well trying to save it in the oven.... This pile of SHIT weber smoke fire which has been redone under warranty, had 3 thermal events and countless random shutdowns (shorted harness, glow plugs, fans, auger failure etc..) did it again when it hit 147..got it relit, but lost temp to 139. Got it back going and it shutdown with multiple errors at 149*. This thing is either going on craigslist or a dumpster. Lost wayyyyy to many cuts to it, and almost lost our house in NB to it... that "thermal event" scorched the side of the house. It's a known problem with these...and much of why I chose a different brand with my griddle vs weber. They DO NOT stand behind their product. FUCK WEBER :mad::mad::mad::mad::mad:
