This isn’t a picture of the beef we get from @wash11, but I’m now cooking from home 5-6 nights a week. It has inspired us not to eat out and try new things. Saving a lot of money as well!

Question about one piece of steak I cannot get right. Round steak that’s been mechanically tenderized. I have ruined two steaks. Any recipes?

That looks great! What was your recipe?

Thanks. I made a rub my Melting half a stick of butter in a pan, added fresh garlic and seasoning I purchased in Oatman then thinned it out with a little olive oil. Rubbed it all over the meat put then put in oven on convection roast for 15 mins at 450 then dropped it down to 325 for a little over an hour.

Just to get an idea, how much meat is that? Meaning is that like a 1/4 or 1/2 cow or full cow? Mutliple orders?
This order was a 1/2 beef with lots of custom cutting. 1lb ground packages, tomahawks, mom doesn't care for short ribs so they had them all trimmed and turned in with the ground. Even losing a bunch of bone weight they still came in at a hair over 250lbs package weight that you see here.

That’s the setup right there

Forget his meat, have you tried his sausage? (Ok, it‘s Amys‘ sausage but that isn’t as funny.)

We bought breakfast sausage, chorizo and Sweet Italian sausage from them a month or so ago. We finally got around to trying the breakfast sausage this morning and it is unbelievably good...holy shit.

We did a turnaround delivery to Fontana this Saturday. Amy’s been pushing for an upgrade on delivery truck for two years but Covid pricing made it unaffordable. Prices are coming back down and we found a used service department loaner with 2600 miles on it. Add that it was last years model so there was great incentives to move it plus 1.9% financing for 72 months. We’ve done 3 deliveries with it and you can now add me to the RDP F150 nutswinger group.

We got the sausage last time to along with Amy’s spicy Italian sausage. Damn it is so good. Just the right amount of heat.

Figured this would be the best place to post this.

Does anyone recommend a Demi glace recipe or store brought brand?

Well Amy and Joel have done it again with the Breakfast sausage. Met up with them yesterday just for a restock on ground beef but got some breakfast sausage as well. Unreal as usual guys. Zero spice needed, amazing flavor. Thank you guys and always good to see you and chat for a bit. See ya in October!

Good timing on this thread popping back up.

Finally got around to pulling out some beef shanks from Joel.

These things were huge, and actually had good marbling for a shank. They were awesome. I don’t think I typically see much in the way of marbling on shanks at the store.

Super happy that you like her sausage! The amount of time she spends processing different sausages makes my back and feet hurt just to think about
