Bought a tri tip last week at a local market. They were on sale. I took it home and started trimming. OMG. Look at how much fat I had to trim. I took these pictures and showed them to the store manager today. She was in shock. Offered a free Tri tip to me. I passed. I love this market and shop there often. Great customer service.

Tri tips has fantastic flavor due to the high fat content. Yes, I trim a bit off, but they are tasteless without a layer of the fat. I will usually trim off 1/2 a pound, but the trimmed tri tips are way more costly.

That poor tri tip looks naked.... Like our dog after a trip to the groomer's.

I too trim off all I can, the meat has plenty, just don't overcook and slice against the grain.

Keto diet says fat is good, but how much?

I trim them too. Why cook and season parts you aren’t going eat?

I marinade them overnight in a soy, ginger based marinade. Next day, sear them at 500 for 2-3 minutes a side, pull, spray on the marinade again and wrap it with a thermometer in it. Put in a preheated oven at 350 until the internal temp hits 118. Let rest 10 minutes then slice.

3 ingredients -
Sea Salt.
Cracked Pepper.
Granulated garlic.

Oak. (ok, 4 ing.)
Tri tip (ok, 5 ing.)
500°+. 4 and 4. (Or so)
Then indirect.
15. Flip. 15/20 minutes more.

Rest.
Slice.
Serve.

Trimming with that size fat cap is a must. Then it depends on how you took it. If smoking it 225-300, hard fat will not render down even with a reverse sear on it.
I have noticed the untrimmed tri tips have been coming which much more of a fat cap. That is where you have to figure if the price per pound for trimmed vs untrimmed is worth the squeeze. I choose untrimmed so I can figure out what I want to keep on it.

you bought a tri tip with the Peel on You should never pay more than 4-5$ per pound for that. Best place at 9.99lb Costco otherwise Stator Brothers usually run 5.99$ lb to 7.99lb vacuum marinated or not. sp
