Ok got back home from Texas Friday. It wasn’t that cold and the people are very friendly.

Finally had Texas pit BBQ in Texas at Hard Eight BBQ it was really good! I’ve had better bbq but that’s just a preference thing. But if I went back to Texas I’d go right back to Hard Eight.

I prefer Heim to Hard 8. But both are pretty good. And ditto on Buc-ee's
Yeah I really think it just comes down to personal preference. The best thing about hard eight was the pork tasted like pork and the brisket tasted like brisket. They don’t over do the seasoning or smoke and the sauce is up to you. The pork ribs where so good I didn’t even put and sauce on them.

There's a new(er) location in downtown Waco as well. Opened spring 2024.
Since we’re talking about Texas and barbecue in Waco, I’ll fill you guys in on a secret. Stop in and buy some of the jalapeño sausage from Slovak. It is the absolute best sausage on earth. For bonus points they have tall boy shiners.

Their bakery & deserts are amazing. Old world kinda stuff. So freaking good.

If I didn’t have an early flight the next morning I would’ve got some Texas Twinkies (jalapeño poppers bbq style) and tried the pot of complimentary beans with jalapeños! Giant serve yourself pot!!

looks like you went to The Colony Hard 8... My sister has a house in Frisco. been a few times. good food!

in my personal mention, for Austin BBQ,

hands down its the working mans place:

DONNS Barbewque on FM969 near Manor TX.

AAAAAND, the best sausage is Elgin Sausage!!!!!!!!!!!!!!!!!!!!!!!!!!!

damn now I'm hungry!

Which Hard Eight did you go to? Good stuff along with 407BBQ
Haven’t been to 407s new place. They had a trailer next to the railroad tracks in Justin first and was awesome. Open pit bbq prices seemed to go crazy after covid! There are so many to choose from.

No joke. It is not cheap!

It’s not far from there. I never got to the range next door which is supposed to be really nice.

Hard 8 was my intro to Texas BBQ (in Coppell), really good. A little north of The Colony is Hutchins BBQ (in McKinney and one in Frisco) which I think is better. Any BBQ place in TX is worth a try, but there are a ton of good ones throughout the state.

Trophy Club opened up “The Original Roy Hutchins BBQ.” IMO it’s better than Hard Eight and 407.
