Boat manufacturer originally installed this head unit protector which required an 8.5” x 3.5” hole. I’d like to replace it with something more modern without having to replace the interior or using a basic single din head unit, any thoughts?

This is the direction I would go. If you dont want to powder coat it, you could just paint it as well. Its not a part that will get a lot of wear or anything so the paint should hold up just fine.You could have a plate made and powder coat it. Then cut out for your new head unit. Not sure what unit you are putting in but I have been very happy with the Fusion RA210.
Will this withstand exposure to direct Havasu sun and weather without a cover?... Ive got the OG style smoke plastic bubble cover which I cant stand looking at .. Frankly I hate having the headunit in the dash...A Fusion Marine Head Unit will cover that hole without needing an adapter plate. you may or may not have to use some backing blocks for the screws to have something to grab but I've been lucky with not needing them on most
Mine does. After a season or two I did buy a molded rubber cover that snaps over the head unit. But it doesn’t shut off or lag after being in direct sunlight.
