On the grill tonight. These are going to be awesome. If you have never had it the ground elk is very lean. Leaner than buffalo IMO very clean taste

The year I spent in Florida I had to stop by a subcontractors place to pick up some material. Anyhow they were cooking up some moose burgers from Alaska. It put me into a tailspin on if I like elk or moose better.

Also Mule deer taste like crap, but if you get into the Midwest and eat some whitetail fresh out of a corn field it is a game changer. I lived on white tail for 3 months where I made all kinds of recipes, basically from Lasagna to medium rare steaks.

I am the pickiest eater there is honestly just knowing it is deer is enough for me to psych myself out. I used to love this stroganoff my MIL makes. I found out she puts cream of mushroom in it and now I gag at the smell. I’m a child 😂😂

I am the pickiest eater there is honestly just knowing it is deer is enough for me to psych myself out. I used to love this stroganoff my MIL makes. I found out she puts cream of mushroom in it and now I gag at the smell. I’m a child 😂😂

One thing you can do to fix wild game is soak in buttermilk, however if you do this to Elk I'll punch you in the face 😉.

I havent had Moose yet but hope to one day. I have heard its delicous

Nothing better! We like to mix shredded cheese into our patties so they aren't so dry from being so lean. The cheese adds a little oil when cooked!
Maybe i will give that a try next time.

I now prefer deer to elk. Use to be the opposite 10-15 years ago. Now I kill on average 8-10 deer a year. Much prefer it unless it’s a stinky deer in the rut. They are disgusting, I give those away. Daughters deer below from last month. Was one of the more rank deer I’ve ever walked up to.

Elk is good. Had central CA coastal deer when I was living in Morro Bay. Those deer fed on apples and coastal grain. They were excellent. As good as elk.

I’m some areas in N. Arizona, the butcher sets up a tent near a popular hunting area, with freezer rig, and the guides use them to process the elk meat in the field to the point they can get it back and package it later.

Last weekend was opening Elk.

I gotta be honest, I read the title about smashed elk and thought this was gonna be a thread about eating road kill.
I've been known to cut the steaks out of fresh roadkill deer before. :cool:

When I was working up in Alaska, at the end of the season in the fall my Sister and her family would get together with 3 other families and have a potluck.
I forget the catchy name they came up with it . . . but the rules were, no salmon, halibut, crab, clams, trout, etc. allowed . . . all the stuff they were tired of eating from the summer.

I got to try some really good and unique things from the area . . . one that really stood out was caribou . . . someone made a caribou stew and it was delicous.
Spruce Grouse was excellent as well.
Bear wasn't bad . . . tasted like a cheap tough steak w/o much flavor.

We mainly eat Elk. The Mule deer in NM don't usually taste very good (in my opinion). But the best game meat by far is the Oryx. If you ever have a chance to try that, don't pass it up. Its amazing.

I’ve had a pretty good year. Took a buffalo in April and a NM mule deer in September.

In years past, I’ve taken TX whitetail, central CA boar, and a Corsican ram. My buddy has given me elk steaks and ground as well. I also ask @wash11 to hunt down a grass fed grain finished quarter cow about once a year 😂

I’ve learned there is a general agreed upon ranking of good eatin’ animals down to rotting meat like animals. Elk, bison, moose, some of the antelope family are the best. Some ram/goat, boar, and bear are at the bottom.

But I think the biggest factors are diet, gender, age, and in/out of rut. Wife is the decider of gamey-ness in our house. I’m fine with everything.

TX whitetail was 5+ years old but eating corn from feeders… pretty gamey. Wife spit it out. Age was probably a factor and rut was close to starting.

NM mule deer… younger and eating grass. Not in the rut. Wife is fine with it but prefers a @wash11 filet.

Multiple boar… one eating carrots and the others eating wine grapes. You hear bad things about wild pigs but these turned out great. Wife doesn’t eat pork but will eat these.

Buffalo was a female and eating grass. Bison ribeyes and filets were some of the best we’ve had off any animal.

Corsican ram… male and eating grass. Heard they taste like shit. Got all of it ground and seasoned. You can tell it’s something different and little gamey. But good enough that wife still eats it. Chorizo anything is probably good 👍

Side note: Most of the ground meat that I have has beef fat added because the meat is so lean, it would be dry ass garbage without it. Or I just can’t cook/grill properly.

Elk is next on the list. At least I have the freezers for it now.

The first time we harvested an Aoudad everyone told us it would be trash to eat, but the ground was surprisingly good. No gameyness at all. But we are very particular about how we handle the meat during processing and get it cooled down as quickly as we can.
Was a great year for us as well 🙂. Elk Oryx and Aoudad.

Never eaten a stateside Oryx but Botswana Oryx is pretty decent. I wish we had game meat like Africa. Best I think is Eland, then a toss up between ostrich and wildebeest. Zebra if cooked right can be very good as well.

I've never been fortunate enough to try any game meat from Africa, but I am sure it is excellent.. We are pretty lucky in NM to have had a few Exotic species that were imported years ago to enhance the local hunting opportunities (Oryx, Ibex and Aoudad (Barbary sheep), but the tags are hard to come by. I'd love to see the Oryx population grow exponentially off range so that there would be more opportunity to harvest them.

Elk is amazing. Old neighbors used to Elk hunt every year in Arizona…never went but the Elk tacos were incredible.

This thread really makes me hungry for some beef alternatives like bison or elk, etc.. It’s amazing to me that these animals are now commercially raised. I think that’s wonderful. I think they should’ve been for years and I haven’t had venison in a long time. It was typically dry, but then that could’ve been the way I prepared it to, see that readily available in the supermarkets I bought hamburger patties today, but I’ll research it tomorrow

Plus some restaurants sell buffalo burgers. Any time I see that I get it. Its always good.

Best buffalo burger is No Name Saloon in Park City.

100% on the Bison ribeyes. I have had them a few times. Great meal

I made some smashed elk last night near Williams, cold enough it should still be ok through the night. Stupid bastard just stood there staring at us till we smashed him.

I took a call for a kid that did the same at Goffs. Turned out to be the godson of one of the barbers where I got my haircuts at the time. She was telling me the story and I didn't have the heart to tell her how horribly he died.

I took a call for a kid that did the same at Goffs. Turned out to be the godson of one of the barbers where I got my haircuts at the time. She was telling me the story and I didn't have the heart to tell her how horribly he died.
We’re still discussing elk right?
