On the grill tonight. These are going to be awesome. If you have never had it the ground elk is very lean. Leaner than buffalo IMO very clean taste

The year I spent in Florida I had to stop by a subcontractors place to pick up some material. Anyhow they were cooking up some moose burgers from Alaska. It put me into a tailspin on if I like elk or moose better.
Also Mule deer taste like crap, but if you get into the Midwest and eat some whitetail fresh out of a corn field it is a game changer. I lived on white tail for 3 months where I made all kinds of recipes, basically from Lasagna to medium rare steaks.

I dont add fat. I bought 10 ground elk packs in 1 lb pack. The elk is from Montana. Very lean and I add some pepper, salt, garlic spices and hand roll it all in real gooddo you need to add fat ? or does the butcher do that when they grind

Maybe i will give that a try next time.Nothing better! We like to mix shredded cheese into our patties so they aren't so dry from being so lean. The cheese adds a little oil when cooked!

Thats a score. JealousWe dont. It's all barter and trade. The elk is local. They go on moose and buffalo trips a couple times a year.
I've been known to cut the steaks out of fresh roadkill deer before.I gotta be honest, I read the title about smashed elk and thought this was gonna be a thread about eating road kill.
We mainly eat Elk. The Mule deer in NM don't usually taste very good (in my opinion). But the best game meat by far is the Oryx. If you ever have a chance to try that, don't pass it up. Its amazing.
Elk is good. Had central CA coastal deer when I was living in Morro Bay. Those deer fed on apples and coastal grain. They were excellent. As good as elk.

I’ve had a pretty good year. Took a buffalo in April and a NM mule deer in September.
In years past, I’ve taken TX whitetail, central CA boar, and a Corsican ram. My buddy has given me elk steaks and ground as well. I also ask @wash11 to hunt down a grass fed grain finished quarter cow about once a year
I’ve learned there is a general agreed upon ranking of good eatin’ animals down to rotting meat like animals. Elk, bison, moose, some of the antelope family are the best. Some ram/goat, boar, and bear are at the bottom.
But I think the biggest factors are diet, gender, age, and in/out of rut. Wife is the decider of gamey-ness in our house. I’m fine with everything.
TX whitetail was 5+ years old but eating corn from feeders… pretty gamey. Wife spit it out. Age was probably a factor and rut was close to starting.
NM mule deer… younger and eating grass. Not in the rut. Wife is fine with it but prefers a @wash11 filet.
Multiple boar… one eating carrots and the others eating wine grapes. You hear bad things about wild pigs but these turned out great. Wife doesn’t eat pork but will eat these.
Buffalo was a female and eating grass. Bison ribeyes and filets were some of the best we’ve had off any animal.
Corsican ram… male and eating grass. Heard they taste like shit. Got all of it ground and seasoned. You can tell it’s something different and little gamey. But good enough that wife still eats it. Chorizo anything is probably good
Side note: Most of the ground meat that I have has beef fat added because the meat is so lean, it would be dry ass garbage without it. Or I just can’t cook/grill properly.
Elk is next on the list. At least I have the freezers for it now.
Never eaten a stateside Oryx but Botswana Oryx is pretty decent. I wish we had game meat like Africa. Best I think is Eland, then a toss up between ostrich and wildebeest. This thread really makes me hungry for some beef alternatives like bison or elk, etc.. It’s amazing to me that these animals are now commercially raised. I think that’s wonderful. I think they should’ve been for years and I haven’t had venison in a long time. It was typically dry, but then that could’ve been the way I prepared it to, see that readily available in the supermarkets I bought hamburger patties today, but I’ll research it tomorrow
The one at the Oatman Hotel always tasted awesome to me but its been years sinceGround buffalo meat is pretty available in most stores these days. Its small one pound packages ut enough for a couple burgers.
Plus some restaurants sell buffalo burgers. Any time I see that I get it. Its always good.
Best buffalo burger is No Name Saloon in Park City.
