Seems like things sometimes become so routine that you don't even think about them.
I was rolling meatballs Saturday as part of everyday prepping, when one of my employees asked "how many of them do you think you've rolled since opening the restaurant?"
I replied probably close to a million...it boggled my mind when I started doing the math!
60 lbs ground beef per day
2.5 oz per meatball
6.4 meatballs per lb
385 daily
140,525 annually
48 years in business
6,745,200
Holy shit that's alot of cows!
I think I've got carpal tunnel syndrome now😶

How do you prepare your gluten-free pasta? Do you throw the GF pasta in the same water that the regular pasta was cooked in or dose it get it's own fresh pot and water?

My wife has Celiac Disease and we have yet to find a place that doesn't throw the GF pasta in the same water that already had gluten pasta in it.

I didn't notice if you had any other GF options.

We have Gluten free Pena, cooked in its own water. That's the only GF we have

Olive Garden has gluten free pasta they do in separate water. You just have to tell them allergy.
it’s better if eaten there. To go it’s gets kind of mush

If your ever in San Dimas area. Pizza n stuff has great GF pasta and pizza
Michelle gets the gf penne with sauce and cheese ( baked ziti style )

We battle to find mexican food GF. Funny thing is it’s by far the easiest food to make GF but they all seem to avoid it. Weird

to add to the thread. Iv tried figuring out how many pools Iv built and or remodeled . for years we did 300-500+new pools per year, and well over 1000 plasters per year. lifetime count is staggering.

I tried doing the math on Kitchen and bathroom remodels. Every year is different but I have not hit a thousand bathrooms yet. No 2 have ever been the same or similar to another making them a pain in the ass to bid consistently.

Awesome on the meatballs! I worked at a local pizza joint (Graziano's) all 4-years of high school and we hated, and I mean hated, meatball night! The prep, the cleanup aye aye aye. Best times of my life working there...learned to work hard and fast, and in unison with other employees when it got busy. And the owner let us hit the taps!

Your restaurant must kick ass - we only cooked 2 trays every other night.

Nice, most places don't understand that the water is full of gluten once they put regular pasta in it

My wife has Celiac too. It is the same when they try to use the same fryer with other stuff. She won't eat a GF pizza unless it is baked in a separate oven. You never really know though since you can't walk back and check. She has a list of restaurants she has been gluttoned. Easier to just eat at home and better for you.

Damn, back to the calculator 😆..I got it down to about 5 minutes per pan to roll em...I can fit 77 in the pans shown

This is where you design a machine to dump in ground beef and meatballs come out. It doesn't matter how much it costs up front, it will pay for itself in a short period of time.
