Pellet smoker Turkey recipe for Thanksgiving...

I searched RDP's and didnt really find exactly what I was looking for. I've smoked a whole turkey once before for Thanksgiving, and think I brined it but didn't inject it. It came out great, but that was my one and only time and was 10+ years ago. I have a large Green Mountain pellet smoker so size of the bird doesn't matter. We are planning to have +/-10 people over this year and will probably make a small ham also, the ham will go in the oven. I get stressed out prepping and smoking main courses, anyone have a go to brine and pellet smoke recipe for T-day turkey?

I can't fit a whole turkey in my Treager but I do a turkey breast (whole or half). For me I use a Kinder brine kit, and then rub it down with butter and a rotisserie chicken rub.

When you smoke a turkey, as it has no real flavor of its own, its critical that the wood you use for smoke is mild. Fruit woods are best, maple is good too. Don't use anything heavy or the bird will taste like an ashtray. And smoke in the beginning but then not after that (as much as possible).

Put a good temp probe in the bird and then you just cook it to temp without worrying about it.

You didn’t search very hard. We make huge threads on this topic every year right? I feel tired already thinking about the process but so rewarding when they say it’s the Best Turkey they ever had

i use the traeger kit, comes with pellets and brine. only thing i do different is inject the bird with about 2 -3 sticks of butter or beer.

I injected a Turkey one time years ago. I didn’t like it as much as straight brine.
Go to ace hardware and get the traeger brine kit.
Follow the instructions. The Traeger on line recipe works perfectly imo.
I also stuff small pieces of butter under the skin, not a whole lot though, just small pats.
Stuff it with Apple slices and sew it all up.
Never stuff a Turkey with raw stuffing.
When it starts to brown loosely tent it with foil.
Couple years ago.

I usually smoke turkey breasts in my Traeger. But I brine them overnight and insert a wooden spoon between the breast meat and the skin to loosen it up before brining. Once I pull them out of the brine, I put a poultry rub directly on the meat. The skin will not allow the smoke to penetrate unless you loosen it up first. You can always keep the skin on with a couple of well placed toothpicks to hold it in place. Just make sure it's kinda loose. They always turn out juicy and smoky. 5 gallon buckets from Home Depot work great for brining.
