After all these years of procrastinating I bought a Traeger grill/smoker. UPS delivered it about a week or so ago. I went through the put it together process and the burn in process no problems....Yesterday I did jerky on it and the temp went crazy high right at the end of making it. Today I WAS going to do games hens on the smoke setting (~160 - 180) and it went crazy again.......265+ Several call to Traeger and they decided my new, just out of the box grill is defective...............new parts are being shipped tomorrow. You should not have to fix something new!!!

I've gathered that if you contact Traeger directly they will bend over backwards to make things right. [emoji106]

Sorry to hear this. Mine has been awesome. Even once you get the parts to fix it here is my experience with them.

It does get over temp on start up then gets fine.

On "smoke" setting the pellets drop based upon time, not temp, so the P setting really matters and is different for every different one and different based upon the wood types of pellets. I also adjust the P setting for winter versus summer.

As the temp probe (thermocouple) gets covered with soot and smoke it gets less accurate so I use some sand paper on it occasionally. The smoke and soot acts as an insulator.

Thermocouples are to this day very temperamental as they are tough to manufacture accurately.

Hang in there, it makes great food.

Nailed it. I also clean the probe every time I refoil.

My GMG went shit house just a few hours in. Swapped it for a new one and has been great since. Sometimes shit just isn't right.

You should "season" the grill first by cooking a lot of fatty meats (pulled pork, bacon) for a couple of weeks before trying delicate cooks (really low controlled temp). Sounds like you're getting reflective heat making your temps bounce all over the place.
When I first got my Weber smoky mountain, I couldn't get the temp. to stay under 300 for the life of me!!! Now I can't get it above 275. and it holds temperature rock solid.

Traeger only needs to season once to burn off manufacturing residue. Temps won't fluctuate with reflective heat in this unit. His probe or other part was likely bad. If the temp sensor takes a dump the thing won't work for beans.
