You can read about in vs out until you're blue in the face. But it seems to all depend on setup. But the general rules of thumb I've absorbed from hours of reading, as mentioned above:

In is faster.
Out is "safer".
Out is better around docks.

Everything else varies with setup. Mine has a lot more stern lift when spinning out. I can't really tell much else different with mine, but I didn't play with toe/shaft height either in each scenario.

OUT is safer...physics when turning and the lift from props rotation. OUT the props counter each other when turning...IN they both roll the hull into the turn with lift.

A few pics from last weekend on the Delta. We absolutely LOVE the boat, it's amazing how quiet two outboards are versus one 598" big block.
