Well driving from Dallas to San Antonio I had to stop in Austin

My first Austin brisket, It was damn good.

We were in town for F1. We hit up Terry Black’s just before heading to the airport. We even brought our leftovers with us on the plane. Damn good bbq right there.:cool:

That’s cool. I’m sure people on the plane didn’t like that. Next time I’ll go beef rib. Looked good.

Pit master let me come in for a pick. Drove the next 1hr 30 min smelling like smoke.

My neighbor is from west Texas and is a BBQ god. He studies and reads all the time. He’s been to Myron Mixons class and has one of his smokers. He pretty much studied Aaron Franklins videos, books etc and cooks that style brisket. It is nothing short of amazing. The thing I like about his food is he doesn’t use mesquite at all. So many people think that bbq means mesquite and it is such a harsh wood with super strong horrible smoke profile.
That's my opinion about mesquite too.
I suspect Franklin does more than he's showing in his videos as well.
He's leaving a step or something out of the video.
Very common thing to do when giving out recipes.
