Seems to me that the quality of meat's are going down. Out to eat twice this past week and brought most of steaks home for the dog. Thinking back, I don't recall ever getting as much fat and gristle in the past. Only this past year or so been noticing it. Anyone else?

If you have a Sams club near you, just buy their Prime meats, best steaks ever.
Yes, a lot more consistency than Costco. Ribeye is $16lb. Well worth it.

I get an over cooked steak more often than a crappy cut. Medium rare shouldn’t be that hard to figure out.

I like medium….not medium well. I’ve been ordering medium rare, and that seems to work.

My guess is that it’s a result of stagflation. I’m sure there’s pressure on meat certification to “massage” the standards.

What would be a choice cut in 2019 may just barely make the cut for prime. Just my guess.

And steak was meant to be ordered rare

Their job is to cook and serve it at the temp. you ordered. If it's over cooked call the waitress over and return it. If you don't let them know they either think all is golden or you don't know/care. Either way everyone loses. They should cook you a new one. The customer is part of the feed back loop.

Make your "grocery store" steak amazing , rinse in cold water pat dry "flour' both sides with kosher coarse (non iodized) salt , refrigerate for 30 minutes or more , before the grill rinse thoroughly again under cold water to remove the salt , season with only garlic powder (no more salt !) and black pepper I will be Hella tender and juicy Eat rare !

Funny, just had ceviche for lunch. Took a few bites and called it a meal. Didn’t ask for another one. I’m not a fan of pissed off cooks. Now I’m crossing my fingers that i didn’t eat too much.

I’m a Ribeye whore. I think since COVID finding decent cuts have been extremely tough. I can usually find a good package or two out of 30 or so at decent shops. Anymore I’ll go through all of them and find nothing to buy. Hit the motherload about 6 months ago and ended up getting 60 or so great steaks in 1 stop. But that’s extremely rare.

Costco is our go to for Ribeyes. Buy in bulk and vacuum seal them for when we are having steak night.

Seems like the stuff from the store is lower quality than in the past.
Choice is at best what you see at most stores, and its priced higher than pre-scamdemic prime was. Costco meat went directly to shit...part of why we bought a half a beef this year. Used to be able to get decent stuff at Costco at a decent price, but not anymore...

That is why we bought a 1/4 beef and half hog this summer. Costco in Nashville meat department sucks. Around here (not Nashville) a lot of the places have Select and good luck finding prime.

Seaside market in Cardiff has the best meat department in San Diego, that I know of. They are known for their Crack tri-tip but their ribeyes are fantastic as well.
