I’ve never seen such a thing. New house has one and the light it provides isn’t all that helpful. Ideas for a replacement? There’s nothing over the sink either.

Yes, one nice thing about Texas is the very tall roof lines. Attic access will be much easier than it was in California with the low roof and additional trussing for the tile.Looks like you have a couple of ceiling lights already. Might be able to tap into the closest one and at least get one more light over the sink. Do you have attic access?
Downdraft on the cooktop, not sure I’m a fan. Already conceded that gas is not an option in most places. Weird considering this is where the gas comes from.Don't see an exhaust (hood) fan either. Maybe builder thought this would work??
Correct on both counts.Doesn't even look like a decent fan, more of a builder grade appearance to me.
I also think a fan like that doesn’t belong in a kitchen, dining maybe.

Looks pretty odd . . . i'd ditch the fan and add recessed lighting, you can convert the fan switch to a light switch and use the fan's power to feed the new cans.
Although having a fan in the kitchen during hot days might be a plus . . .

Can't tell from the picture so well, but the area above the sink is sloped. But yeah, that's what I'm thinking. Maybe a pendant of some sort?I would say get take out the fan and put in a new fixture in its place.
For the sink I would put in a canless recessed light. In case you are not familiar with canless you cut a hole in the cieling. The wire box just sits on top of the cirling and the light has spring clips to hold it in place.

It's gonna be in there for a bit anyway, I got other items to tackle first. But the lighting at the sink, ugh. I'll try the brighter LEDs that were suggested earlier. Quick and easy and might do the trick.I bought a house in 2020 that had a little tiny ceiling fan in the master bathroom, and at first I couldn't figure out why it was there.
After using the bathroom for a while, it totally made sense as it really helped with drying off after a shower. Maybe give it a try for a month or two and see if you love it or hate it? Maybe it's there for an actual reason.
Went with the 100w equivalent and I think it's gonna do the trick.Get the highest lumen LED bulbs that are available in that base size for the fan. Saying this assuming that you probably have some 40W incandescent fan bulbs in there. Same comment for the cans over the stovetop, you could probably pop an LED 75W or 100W equiv in there. I'd test bulb upgrades before I start cutting.
