If I purchased and registered a boat in Oregon but kept it in Ca. Would I pay sales tax? And what happens if I change the address to Ca in a yr? This is from a dealer

No sales tax in OR, so you won’t pay tax here.

What are we buying?

I used to always register my boats in Arizona and still do if they are more expensive. I did have a San Diego County person log that my boat was parked outside my home in San Diego and they wanted to charge me county tax. I notified them that it was only brought back to California for a repair and was sent back to Arizona. As long as it's not going to be in an area where a tax man can get to it, you shouldn't have an issue.

you can also do NV non-resident.
I believe that is still cheaper than AZ non-rez

This. I just did this last week. Picked up the boat in Oregon private party (no sales tax), am driving out to Yuma this week to register it (no sales tax on private party sale). Just went to AAA today and registered the trailer in Cali for $125 PTI. You really don't have to drive to AZ, but if you mail it, you risk losing the title in the mail and it takes a month or more to get back your reg. I figure driving out there gives me piece of mind and I'm told AZ fish and game only takes about 20 to 30 minutes to register as a non resident. I figure I saved about $6500 in fees.

We definitely need a crossover. Nautique is really the only one out there that does. The G is not skiable

Uh no! We have a G25… LOVE EVERYTHING about it, other than we can’t ski with it. I’ve pretty much moved on to Sky Ski full time, so not end of world. We have an old shit box jet boat that I’ve been skiing behind when I need to scratch the itch.

Have you been up here to see the boat, or is it new? Where is it?

They’re a good dealer from my experience. We didn’t buy from them (or the other Oregon dealer) but when I was at the lake over near them and needed a small warranty issue handled they took care of it while I waited and gave me a Tshirt when I left. A few from our group have bought both new and used from them and have all had good experiences!
