Got a prime packer brisket from Costco and smoked it Saturday night.

Came out good a lot better than the first one.

Trimmed and seasoned with Plowboys Bovine Bold.
Drum temp between 250 - 275
On the smoker at 9:15 am wrapped in butcher paper at internal temp of 175 pulled at 5:45 pm internal temp of 200 let it rest for about an hour and a half.

It's very tender IF you cook it right. Low and slow is the key and a good cut of meat helps a lot.

That's a good looking brisket. If it cuts with a fork, it appears you hit it just right.
