Bbq sauce and tri tip recipe for smoker

Ok guys, I think my tri tip can be elevated so I am looking for your favorite recipe for a traeger pellet smoker style cook

Secondly I am smoking some drumsticks and looking for your favorite bbq sauce (stock or manipulated) for that

for the tri tip, i keep it simple. salt pepper and garlic, thats it. for the drumsticks we like the Kosmos dirty bird and no sauce. they also have hot version that i have not tried.

Dry wings it’s mostly lemon, pepper and garlic salt. I’d it’s wet i prefer to cook on the top rack til they’re up to temp, roll in buffalo sauce and give it some grill marks.

Tritip I use a vacuum deal to marinate. Olive oil, crushed garlic, salt, pepper, Worcestershire, onion salt and a little water. Sear on both sides and throw it on the top shelf of the BBQ or the Traeger til 120.

How do you do the vacuum deal? That's how Seaside Market, here in here in Del Mar, does it with a burgundy pepper mixture & it's great. I would liker to try my hand at it.

Anyone else ever try that?

The sauce is for drum sticks (party wants them wet) no Buffalo

Tri tip
I used to do a marinade of
A1
Worchestshire
Season salt
Garlic salt
Mustard
Hot sauce

I have kinda gone away from them since smoking the tip now. Maybe I’ll give it another run. I am making 2 tri tips so I can do it 2 ways too

My mom bought me one of these years ago. Pretty much only use it for tritip and chicken breast/thighs.

Have you tried Scott’s Santa Maria seasoning?

Bottles are black and white labeled.

I like kinders SM seasoning o doesn’t seem bland to me, maybe just rub the tri tip and let it sit overnight then smoke it?

Too many seasonings kill the taste of the food that you're trying to enjoy.
I was just watching a show where the guy visited southern smoked rib joints
Ribs looked perfect and then he slathers this white cream sauce on it, wtf?

Do you notice a big difference on breasts? Lately they’ve been getting bland no matter what is do.
It seems to help a little. For me it’s a crutch because i usually grab what’s on sale at Stater Bros and then head home and cook it up. I can marinate for 15-20 mins and cheat a bit. I usually throw soy sauce in for chicken and finish off with Teriyaki. If I’m doing plain chicken I’ll do leg meat to get some flavor.

I actually don’t use bbq sauce while cooking but I always have it on the side when served.
My go to for bbq sauce is Chri&Pitts, the hot one if you can find it.

Or shit, the ole never fail go to.....salt , pepper, garlic. I prefer granulated garlic....or even dry minced garlic flakes if you like it stronger. It you like a stronger smoke flavor... add some pellets to a smoker box or tube, get it going on your BBQ and add that to your Traeger.

We make our own BBQ sauce,

ketchup
vinegar
lemons
liquid smoke
water
browning sauce
a couple other things cant remember
salt N pepper
crushed red peppers
chile powder

we jar it up so it lasts about 7-8 months usually make a batch during winter it has to reduce down for a few hours on the stove.

takes a few batches to get it just right….

Used this on both Tri Tip and chicken in the smoker. It is really good. Costco also sells a larger container of it.

Excellent. Tri Tip don’t get big ones get about 2 lb’rs get a few they are super tasty

it’s So easy to pick up one if these, I don’t mess around w/ Tri tip any more

Vons usually Carries the Scott’s

Coat in olive oil then coat & rub in for 30 min.

Smoke till 15 degrees out from rare then sear. Rest till 130 degrees

I’ve been using kinders Santa Maria rub. Looking for more flavor it’s kinda bland
The Kinder Spicy BBQ Sauce is my new favorite on ribs, chicken thighs and drumsticks. The seasonings are pretty good but seem pretty mild to me. I like the pre-seasoned Costco or Stater bros Santa Maria tri tips. Can’t go wrong with either.

Best wings I’ve ever had were in Frisco Texas at a bbq shop a friend owns. He had some Texas competition barbecue crew teaching some tricks.

Used these 3 rubs & the finishing sauce. Smoked over Pecan. I’ve replicated it and the whole family loves it.

You can get this stuff at BBQ’s galore




Finish in this sauce. Toss in it then grill for 5-10.

After the initial smoke with the rub, we've wrapped it with foil and smothered it with sweet baby rays and put back on with high heat to "seer" it. We haven't done it like that in awhile as we've been trying different things.

Speaking of Kinders their hot link sandwhich was the bomb.
They’re from where I used to work. Quite a few in and around the SF Bay Area.
I used to eat out for lunch everyday before I retired and Kinders would be a couple times a month if possible.
Gonna miss them more than In-n-out. 😁

I get the Costco pre-seasoned ones. Not the ones in the vacuum-sealed bags, but the fresh meat dept. ones. Sometimes they run out.

Santa maria was/is KSS like said above Red Oak , Salt , Pepper , garlic salt and some even use MSG post cooking they "rest in" an ice chest (when large quantities are done , we just knock the horns off yummy rare ! Serve up Pinkitos, simple green salad and buttery french bread

For tri tip I like to use Kosmos Texas beef and then their regular cow cover or hot cow cover if you want it to have a little more spice.

I’m a big fan of doing tri tips brisket style with a marinade injection or marinating it and cooking sous vide for 5 or 6 hours then sear it on an open flame or a torch. Both will get you atta-boys.

Bbq sauce. Im down on that shiz.

Orange Marmalade, molasses, dijon, Sriracha minced garlic.

In that order of volume from biggest to smallest, to taste.

My go-to is buying the Burgandy Pepper corn marinated trip tip from Stater. 45 minutes in smoker and reverse sear on Que, 5 minutes on each side. Never done me wrong yet…..

Smoke it at 225 till it hits 145 internal…wrap it in butcher paper or foil till it hits 199 then pull it…don’t unwrap…let it rest for 45 minutes.

Are you talking about brisket? Temp sounds way high for tri tip but about right for a brisket.

Tri tip brisket style. Try it…it’s amazing. Many ways to cook tri tip…this is my favorite. Make sure ya wrap it before the stall!
