We're coming up on a decade of doing this now and all our hard work has paid off. Our quality and consistency are at a level we were sure we'd get to someday.
Now the new goal is dialing in these Orange County, Phoenix and Vegas deliveries. This is the final growth phase. Once we fill up these regular/repeat customer spots I can be done marketing for good. I'm dangerously close to being the guy with a cabover camper in a park on the strip somewhere during the winters, taking his chick out for midday cruises in an old beat up Hallet or Mandella flatty- at least a couple times per month between deliveries.
We appreciate you Joel! My wife and I watched the documentary last night on the big tv and she was hooked. I read all 17 pages again of you off the grid thread. Need pics of that fat tri-tip that Amy put in there for you.I picked up sampler pack, not that i needed to sample it, purchased beef from Joel way back when, but always too busy to drive out to pick it up in Arizona. With new OC delivery route, i will be buying as needed, Stater bros meat guy will just get a wave as i pass by from now on.

2 cu ft is really comfortable on a 40lb sample box. I call them "40ish" because Amy stuffs them full of goodies. Keep in mind I traveled the country with a company credit and a large expense budget for entertainment and frequented some of the best steak houses in the country. But the Filet that I cooked tonight on my black stone with nothing but salt, pepper, garlic powder and butter (I am no chef by the way) was beyond good. Tender, full of flavor, and the taste really shows what hand grown beef and Joel’s hard work is made of. I am a customer forever Joel.

Post your prep if you can, looks goodDid a brisket flat on Sunday from Joel, 14hrs on the smoker. Came out pretty tasty!
Thanks. 40% salt, 40% pepper, 20% paprika. Rub liberaly on all sides. Pop it on the smoker at 225, wrap in butcher paper at 165 until finished, pull at 200-205 depending on the feel for doneness, then let it sit in a cooler still wrapped for at least 20 minutes.Post your prep if you can, looks good
I NEED this recipe asap!We have tacos every Tuesday for some reason. I requested shredded beef tacos months ago and the wife kept putting me off. She’s on a fish and chicken kick. My Aunt used to make the best shredded beef tacos growing up.
She asked me a couple of days ago what piece of meat she should throw in the crockpot…as usual my response was short, just grab a piece of beef out of the freezer and put it in a the crock pot. Lol
Tacos were unbelievable tonight. I made the joke we were celebrating pride night with the taco holders.

After dinner I asked what meat she picked….she told me brisket. A brisket…wtf…lol I almost fell over at the table but they were the best shredded beef tacos I have ever had. So good and the margarita didn’t suck either.
