What cut of beef?

If I wanted to make beef sandwiches like pulled pork, what cut of beef would you use? Everything I buy cuts well but doesn't seem to "shread" like pork butt does.

I buy a sholder roast. Put it in the crock pot with a big jar of pickled banana peppers and some water. Mushroom onion soup mix and cook about 6-8 hours. Shreds easily with two forks. Made it monday night.

Beef shoulder.

You may have had difficulty in the past because you didn't cook it long enough. Lots of interconnective tissue and calogen that needs to break down. Low and slow for a few hours. A 2 pounder, done right, will take about 3 - 4 hours in a dutch oven. Season and brown it well first, whether you use a crock pot or not.

Make sure you have enough liquid in there too. Rampgirlls recipe in the crock should work great.

If you wait till it cools a bit, cool enough to handle with bare hands, it'll shred really nicely. If you shred it when it's piping hot, you may end up with much smaller shreds. Allow the fat in the meat to cool off and you'll get nicely shredded meat.

I've used chuck roast before. The last one sucked though as I posted in another thread. If I remember right, I believe the 7 blade roast works well too. The kind with the bone in it comes out tender. It's actually on sale this week at Vons I believe. :thumbsup
