2 stories I have about wasabi.

1) when my 14 year old was about 2 we were at sushi and while we weren’t looking he took a fistful size of it and put it in his mouth and started eating it. We quickly finger swept and he was fine.

2) bunch of us were at Chumash casino about 15 years ago and there’s a huge dish of wasabi there. Buddy says, I’ll give you $300 if you eat that. Done! I was a bit tipsy but honesty it wasn’t that bad. It’s almost like the soy activates it.

We had a guy at work who wasn't very cultured and we all (except him) got sushi one day for lunch...he asked about the green glob on the plate and someone told him it was green tea icecream for desert...and that he could have it....he did, and wasn't too happy about it. We still give him shit about it 20 years later

99% of "wasabi" is fake. Usually green horse radish.
Yep. You get the real Deal off the root. That’s the good ish.

You go to a true Japanese sushi spot you only get a small Amount on the Side of sashimi and a bit in between the fish and rice on sushi. Don’t even bother asking for wasabi at a true Japanese spot like a Tokyo style sushi restaurant. It offends the chefs. Oh and there’s only like 4 rolls too and none of the sauces or American BS. it’s all about the fish quality.

We have a hole in the wall place down the street from us. Sushi Hanada. Yuki hanada and his wife opened it about 25 years ago. They barely spoke / speak English. True Tokyo style sushi. Insane. He went TO LA fish market every morning to get fresh fish. Unfortunately yuki passed away suddenly from throat cancer a couple months ago. His wife and his apprentice (also Japanese and downs not speak English) run the place now. Son and I went there last week. So good. Got my youngest son a Togo sushi combo. Notice the absence of wasabi. And a pic of tuna tar tar. Fuckin insane.

But again it’s traditional. We rarely take anyone there because it’s not American style sushi. So people trip. Kinda funny.

The real thing is a treat. Most Sushi Chefs are super stingy with it.

Doesn't it have something with how quickly is goes bad as soon as you cut the root though? I thought I read something like that before.

Peppered salmon sashimi with some nice strong wasabi could be my crack. Also, a nice simple spicy tuna roll or Philadelphia roll with another strong cut of Wasabi might be the best thing on earth.

I can make any sushi roll taste the same with a good supply of wasabi, ginger and soy sauce. Just like steak and A1 sauce, it’s all the same by the time I eat it. So I order the cheap rolls, my wife shops for the most expensive I think. In the end it’s all similar to me.

So I was moving from Dallas to Knoxville just 2 weeks ago, major kick in the ass, all the adult beverage I had left late Sunday night was an unopened bottle of 17 year Mcallum I received as a gift a couple years back. That stuff went down mixed just the same as Jack and Coke I hate to admit, I needed the caffeine.

Yep just like this one, box and all.

It's just really hard to grow and process commercially.

Took my Mexican friend for him to try sushi. He thought the wasabi was guac and popped the whole thing in his mouth. I laughed and said it wasn't to bad, but his face said otherwise.

Ours just closed, been following the owner for over 25 years and he just had to retire.

My favorite Japanese restaurant is run by an old Japanese couple. They are only open weekends and have short hours. https://kappasushi.com/

I usually order take out as soon as they open because getting a table is near impossible even getting a reservation is hard.

First time I had some I put a dab on some fish I had did t know to mix it up. Cleared my fucking nostrils for sure. 😂

I had some bluefin last year I caught took to local place owner used some real wasabi when he served it to us. Was very good.

My brother's best friend is Japanese. His parents mix wasabi with a little soy sauce and dip rolls into the mixture. My parents copied them after going for sushi years ago. I don't do it. But since my brothers friends parents immigrated from Japan. Maybe it is a thing there.

My first trip to Japan (Osaka) I found a cool corner 4 stool outdoor diner, small counter. Mix of soups and fish mostly thought it was neat.
Buddy with me had been before, spread some wasabi like I normally would, holy hell my sinuses were clear for a week.

When I saw Steve-O from Jackass accept the challenge to snort it while in Japan I knew what he was in for, crazy bastard for sure.

Many years ago when I was working on sport fishing boats in So Cal, a few of our regular Japanese American fishermen customers would bring us amazing items made by their wives and mothers. A small container of fresh wasabi was always included. That stuff was very potent and good. Our onboard cheese burgers were good. But, day after day you got tired of them. Those home made, fresh Japanese items were a welcome change. This was years before any Sushi Bars. And the wasabi was always the Bomb.

Looks amazing but not my cup of tea. I like ALL the sauces, and everything. I learned my lesson in Tokyo when I was drunk and offended the chef asking for more wasabi... Oh and at the same time I asked if they could sear the next order of salmon a bit. Facepalm.. He told me to go do that in Los Angeles LOL

But you are 100% correct about the real Wasabi. That stuff I love, very pleasant and interesting sting on the tongue, it's amazing. I bought some and had it along with some seared tuna I made last summer. Need to get some more. It was pricey if I recall.

I used to travel to Japan for business 2-3 times per year, and had some incredible food there. There was a small izakaya bar that had great small plates and they served their sushi and sashimi with fresh Wasabi. That was the first place I'd had it and it had so much more flavor than the paste we get here.
