Started my dinner early today…
Cut up some andioulles gave a slight frying in the skillet for a bit of color, then on to the smoker for about an hour…
Why thats going. Diced up some trinity… Onions, Celery, Bell Pepper, fried that up in a bit of butter, until the onions are translucent. Added a bit of Cajun Seasoning, Garlic, Beef Boullion, diced parsley… Then I added some water, brought it to a boil, and put it in the crock pot.
When the sausage is done smoking, then it goes in the crock pot…. in about 3 hours I will start tasting and adjusting the spices
Which will most likely be
Thyme, Oregano, hint of Cyenne, maybe some praprika, and a hint of cumin maybe… hummm salt/pepper. I dont know yet. I haven’t made this in awhile.
But I bet its gonna be damn good… pretty sure about that.
