Prior to my GLP 1 "diet" I fell for the Campo Grande Iberico Pork packages everyone see out there on social media , This meat came nicely packaged , cryo packed and shipped with dry ice . Been looking for a special occasion to try it . This is a "Pressa" roast that we grilled yesterday , Its truly delicious and tender and yes its a bit pink but was cooked to an accurate temp (to avoid Trichinosis risk) This Spanish grown Pork is unique and different . This piece was very similar to tri tip and super tender

I like good pork. The kids do 4H pigs on the farm. Because of the way they are raised and feed, it's some of the best pork you can find. We get a whole pig every year.

No, dont want/need the extra salt. I just sear it and pull it off at 130 and let it rest 10m...........

I looked at that and thought of the SV but I grilled this super hot at 3 mins a side and finished it in my oven
