We have a mid-grade set of Henkles and they are fine. The next time she wants Wustoff (sp). I had better start saving now.

I bought a nice set from Bed,Bath and Beyond a few years ago for $160. It was normally $200 but they have those 20% off coupons. We didn't have any but asked the Manager to hook us up and he did. Apparently it's common for people to ask for the coupon if they dont already have one.

I have some old Cutco pieces that are 25 years old and still cut well. The pricing is in the stratosphere for that stuff

Looks like no one discounts. Maybe a coupon at bbb is the way. geez I hate going in that store, it's like some vortex sucks the life out of you while you are in there. :D

LOL... it wasnt quite that much.... maybe $1200.... some things are just worth having. What is the use of a profession kitchen with crappy knives? Just like the previous posted about Shun said... Scary sharp!!!

X3 on the Shuns. Not cheap, but amazingly sharp and awesome to work with. It was a Cutco demo at the fair that got me fired back up on a quality set of knives. Cutco seemed like a good value, but the Shuns (and many other high end knives) are a work of culinary art.

My wives father is a meat cutter and the only knives she'll use are the brands he uses which are Forschner or Dexter. Most of ours are Forschner's.

Go to any butcher block and more than likely, there will be a Forschner in his/her hands. Dexter is a great product too.

We've got a set of Henkels, good quality knives, but really need to get sharpened, I've done the best I can with the steel rod, but my sharpening skills only go so far - who do you guys take your knives for sharpening now that all the cutlery shops that used to be in the malls are gone?

I like the Henkel ours are about thirteen years old and could use a good professional edge but solid construction and balance is good

8yr old thread is chock full of long not seen members.
We have a handful of Cutco's but mostly inexpensive disposable stuff we haven't disposed yet😊

Building on a Cutco set a little at a time. It's not just that they are extremely sharp, it's the fact that they stay that way for a couple years before needing to be refreshed and that mirror polished surface just glides trough the food.

How well do these uber expensive knives hold up to lets say, prying, screwing, granite cutting surface and repeated sharpening with a Chef's Choice sharpener ? 😖

And this is why after 37 wonderful years of blissful marriage, our knife holder cutting block is filled with only the finest Chicago Cutlery 😂

Yes, we've been awed by the marketing pros at county fairs and home shows, I've offered a hundred times to invest in a really nice set, but alas, she prefers the carefree "Use em, abuse em, then toss em" approach to fine cutlery, and kitchen ware in general. 😁

Wusthofs here. We built it up over time though. Each holiday or birthday, or whatever each would get one as a gift. We'll be taking them to ROC to sharpen sometime.

Picked up this one for Xmas:
Wüsthof Classic Hollow-Edge Santoku Knife
I have the cleaver, but it sure hardly gets used. The bread knife is pretty popular, as is the smaller ones.

A simple set is all most people need.

We have Wusthof as well, but they also have different grades. I think the major difference is stamped vs forged.

My son can make any knife cut like a razor blade, but he gets good money to do it.

I have a knife he bought for me at a Chinese market. He said he paid three bucks for it. After he worked it over, it's the sharpest knife I've ever had.

But how long does it stay that way? That’s the big difference, cheap shit will require your son’s skill set every other time you use it.

I use Wusthofs also because I like the feel of them in my hand, they just work better for me.

Bob Kramer line manufactured by Zwilling & Henkel myself. I have been trying to learn how to sharpen and polish with my nice set of wet stones myself, but can't get results I am happy with on my regular knives, so I have not done anything to the Kramer's yet, still ridiculously sharp, but not "show off sharp" currently. I can push cut a piece of paper, but not take an elliptical shape out of a piece bent in the shape of a U.
