My small proof box. It's basically a giant humidor that operates 98* and 95% humidity. Make the bread rise consistently and rapidly. I gave it a facelift for my birthday.

F'n 9er made me crank out a crazy MTB ride yesterday. It was like 353 miles all uphill....in the snow. I'm ruined from that.

I think I'm going to hang around the house tonight.

I was dealing with Cig at 5 AM today and I threw out a few funny things (Eye-talian, mutant-bread) and he was just not up to a little humored give and take....so I called him cranky. I didn't know it was his birthday until I read it here. I almost feel bad. Almost. :D

I was going to bed at 5AM. Sometimes it's a bitch trying to wind down after a busy night. I gotta change my body clock.

Hey Cig, on that huge proof box, (proof room by the looks of it). how do you ensure consistent temp and humidity throughout the room? Fans, some sort of automatic humidity sensor? With outside temp and humidity changes I'm sure you have to have some way to adjust.

I'd imagine that you gotta have temp/humidity consistency from corner to corner, top to bottom? Is there a variance in consistency say by a half degree or half percent, or do you gotta be pretty much spot on?

I'll never be a bread baker, just curious.

A fan that's mounted to the roof blows across some electronic heating elements (temp control) and then into a filter that's soaked with water (humidity control). The air from the fan is directed as close to the floor as possible, moves across the floor and then rotates back up to the roof. The consistency from top to bottom and even in the corners is extremely consistent.

You're right, any inconsistency in temp/humidity makes a big difference for the consistency of product.
