In Northern California ya find Toscansa and Acme breads. Nothing tops them. The right tasting Bread is 75% of a good sandwich:
Toasting the onions is essential. It really sweetens them up.

Don't kiss the wife after taking a bite. Her vision will go out & her ears will start ringing. Your breath will jump start a Buick.

Grilled cheese sand witches are another way to use leftover dinner meat too. I had some left over pork ribs I smoked and put the meat from the ribs, some gyre, cheddar, shredded Parmesan, pickled onions, on some sourdough bread.
It was mind blowing.

Sourdough bread, mayo on the outside to grill/ brown, swiss cheese, cold sliced tomatoes on the outside while eating. If you have never tried a grilled peanut butter and jelly sandwich, make a pb&j, spread mayo on the outside, grill till toasted...good with a cold glass of milk.

All your recipes are cool but it can only be a grilled cheese if you actually grill the cheese on a grill. If you are cooking on a stove you are doing it wrong.

A tiny bit of mayo on the inside, butter on the outside. Dubliner Cheddar is super sharp and flavorful.

Sweet pickles on the side.

Otherwise, two slices of whatever's on hand, in the toaster, slam plastic cheese on it and go...

Hell yah, The toaster speeds things up. I have even thrown the cheese in the pan for a few seconds.
Timing is everything. It shouldn't take 20 minutes to make a sandwich I wolf down or share a few bites with the Doggo.
I can add I do use my 8" cast iron pan. I just turn on the stove and start stacking ingrdients.

Thanks for some good ideas everyone.
I thought adding bacon, ham or tomato was out of range but now I'm on to gourmet.

Mayo on the outside of the bread. Whatever cheese I have in the fridge, but usually cheddar of some sort. Gotta have a bowl of tomato soup to go with it.

Denny’s grilled cheese with extra crispy hash browns on the side (instead of fries) and the warm pickles spears! That was my go to after a long day typically eatin at 2:30am.

I just get a good bread and I usually like to go with a peper jack cheese. The main trick is good bacon from the butcher counter. Cook the bacon up a little bit then put the sandwich together, of course butter both sides.

Throw in the smoker until they're nice n toasty. Nothing to it. Everyone loves them.

Yeah i used to be right there with you, all those years of going to key west and i would order burger while the whole crew got the ahi tuna sandwich, tried it once and was hooked, its like the best thing ever, i still don't eat other fish (except for shrimp)
