This time last year they were available in the grocery stores for about $6.50 for a 27 oz can................can't get them in the stores now and online the price is $13 - $15 a can.................WTF is going on with them?????

Hatch.
Get them fresh. 50 lbs lasts a year for me. Already roasted. Peel and bag 5/6 chilis and freeze them.
I recommend hot. Or extra hot.

Down here they do for a few weeks and some stores have a roast day.

How far is Flagstaff from you?
Last time I rolled through there in August they were roasting on every other corner it seemed? Maybe road trip with a couple of coolers is in order this summer!

Sure you can grow the seeds, but unless you live in the region they are grown in they aren’t Hatch chili.
This has been told to me by many folks as I was growing my own. And they were correct. Not the same flavor.


An Anaheim and a Hatch are essentially the same chili. And there’s a reason they have their own names.

I read there are something like 60 different varieties of Hatch chillis?
