I stumbled upon Cosco Prime meats a few months ago and have done 3 Prime Tri Tips on the Traegar. I think they are amazing, big difference between choice and prime, in taste and cost.....

Those that are tri tips maniacs, like myself, give one a try, you will be ruined.

How long do you cook it and what temps. I just bought a JR Traeger yesterday at Costco.

How long do you cook it and what temps. I just bought a JR Traeger yesterday at Costco.

I use a digital probe thermometer to measure and take the meat to 135 degrees and remove, tent with tin foil and let set for 15-20 minutes before slicing. My cooking recipe is put Traegar on smoke setting until meat reaches approx 120 degrees (usually takes 1-2 hours depending on size) then turn Traegar up to 375 until meat reaches 135, remove meat. I have used many rubs, marinades etrc, they are all good!

I love costco tri tips...never had a bad one and it is worth it to pay the extra for the better meat....Maybe its time to step up and get a smoker, I was always under the impression that smoking was for cooking meat and for a long time...

Thanks. Do you sear it first and do you turn it at all during the 1-2 hours of smoking. I'm new to this smoking thing. I usually order from a menu or thru a window. :D

I do not sear it or turn it while smoking, just leave it alone and do not open the cover. Then turn the heat up and finish it off. Tastes amazing!

Been buying them at Costco for over 7 years, never had a bad one.

The Prime meat section can get picked over pretty fast. I do shop the Yorba Linda store but have bought in Corona and Foothill Ranch before. I have talked to the butcher and he said that when they get Prime tri tip in it is gone within 2 days so it can be hard to find. They always seem to have Prime tri tip strips (which are worthless) but are often out of Tri Tip roasts. I call in advance now to check stock ahead and if they have it ask them to set aside for me. It costs quite a bit more then their standard choice but what a difference al least to me....

I coat mine with mustard then roll it in margarita/Kosher salt.
Searing ruins the "rub" so I just slow cook.
Comes out super juicy.

I found a way to do tri-tips perfectly on my gas Weber.

Have the meat at room temperature and have it in a whatever kind of marinade you like - I found a garlic hoisan (sp) sauce at Von's that's pretty tasty. I'll let it sit in it for about 4 hours, during that time flip it over every now and then to let the marinade seep into the meat. Before I put it on the grille I put a liberal amount of Spicy Montreal Steak Seasoning on the side going on the grill and then after it's placed on the grille, put some on the top side.

Get your barbecue on high 500+ degrees and put the meat in the middle of the grille and turn it over every minute for the first 5 minutes.

After that, turn the 2 burners off (I have 3 burners on my bbq) and put the one on at medium heat and place the meat farthest away from that burner and turn the meat over every 5 minutes. When you flip the meat over pour some of the left over marinade over the top of the meat to let it caramelize as it cooks.

After about 20 minutes start checking the internal temperature - when it gets to about 120* pull it off, put in a pan and cover it with foil for about 10 to 15 minutes. Perfect every time.

Makes an awesome meal and killer cold sandwiches later.

***Note***
Make sure that most of the fat has been trimmed off otherwise it'll burn up to a crisp and taste pretty shitty and screw up your evening. Then you have to listen to the old lady bitch and complain about how you screwed up $30 worth of meat and now it's late and the kids haven't eaten and tomorrow's a school day, and if she'd known she would have made hot dogs for the kids.........:swear
